Avocado Pesto Pasta

Go on.. Squeeze another avocado into your life! Delicious creamy pesto and crunchy veg with pasta.. it’s gonna be a hit! Great for back to school, work or Uni healthy lunch boxes.

Avocado Pesto:

1 avocado
1 garlic clove
20g basil
2 tbsp lemon juice
3 tbsp nutritional yeast
30g tahini
Salt and black pepper


180g pasta
Olive oil
1 courgette, in moons
160g broccoli florets, chopped small
2 garlic cloves, crushed
200g cherry tomatoes
160g frozen peas
Salt and black pepper


  1. Blitz all the pesto ingredients in the blender until a smooth and creamy. Season with salt & pepper to your fave taste
  2. Cook the pasta, adding the peas for the final 5 minutes. Drain and save some of the cooking water.
  3. Heat a glug of olive oil in a frying pan, when hot add the courgette, broccoli and garlic. Fry for 5 minutes then add the tomatoes and fry for another 5 minutes, seasoning with salt and black pepper.
  4. Add the avocado pesto to the cooked pasta and peas along with a splash of cooking water and stir through. Add the fried vegetables and stir again.
  5. Serve straight away or leave to cool and store in a lunchbox for eating later.
