Sandwich Perkier Cacao & Salted Caramel bars with chocolate ganache.. can a snack get any better?! Ready in 15mins. Vegan, gluten-free, dairy-free and includes 4 different wholefoods.
Melt the chocolate over a bain-marie, remove from the heat. Stir in the coconut cream until thick and glossy. Leave to cool for 30 minutes.
Soak the dates in boiling water for 10 minutes, drain and reserve the date water. Add the dates to a blender with the salt and almond or vanilla extract and whizz up until jammy and creamy, gradually add the date water a tablespoon at a time to reach a spreadable consistency (you’ll need about 2tbsp depending how sticky the dates are).
Cut each Perkier bars into 3 pieces, spread one Perkier bar with the chocolate ganache and the second with the date caramel. Sandwich the bars together and repeat to make little towers of goodness!
