Sun-dried Tomato, White Bean and Kale Salad

Perfect quick lunch packed full of wholefoods and topped with a scattering of wild rice and crushed walnuts

100g wild rice
80g kale, torn
1 tin Cannellini beans
120g sun-dried tomatoes
1 bunch fresh basil
50g walnuts
1 tbsp olive oil
1 tbsp apple cider vinegar
Salt and black pepper


  1. Cook the rice, drain and leave to one side.
  2. Remove the woody stems from the kale and add 1tbsp apple cider vinegar and a pinch of salt to a large bowl. Massage the kale for a minute until the leaves wilt and turn vibrant green.
  3. Chop the sun-dried tomatoes and the fresh herbs and add to the kale with the white beans, olive oil and lots of black pepper. Toss everything together.
  4. Serve scattered with wild rice and chopped walnuts.
